All CDs have only two channels, left and right; so in principal, a stereo player is all you need. A 2.1 system will give you an enhanced (simulated) bass. Good bass usually enhances the music experience. A 5.1 system is also fully capable of playing in 2.0, 2.1, or even 5.1 modes (simulated surround) and the best choice to enjoy DVD movies. Of course, there is also DVD-Audio and SACD that can have true surround sound. You have to understand how music is produced.
